Adjust until it feels right.
- A whole chicken, or whatever bird you have
- Salt the night before if you remember — if not, salt well now
- Onion, carrot, whatever is waiting
- Butter, softened enough to smear
- Thyme or whatever herb survived the week
Play it
A suggestion, not a command.
- 01Heat the oven hotter than you think. The bird likes a blast.
- 02Smear butter under the skin if you can get a finger in. If not, over the top is fine.
- 03Vegetables under the bird so they catch what drips.
- 04Leave it alone. Open the door only when the kitchen smells like Sunday.
- 05Rest longer than you want to. Carve at the table.
