About this much
Adjust until it feels right.
- Potatoes — russets, or whatever is in the bag
- Butter, a lot
- Warm cream or milk, added until it feels right
- Salt, in the water and again at the end
- White pepper if you remember it
Play it
A suggestion, not a command.
- 01Start in cold salted water. They cook more evenly that way.
- 02Drain hard. Let them steam off for a minute so they are not watery.
- 03Mash while they are hot. Butter first, then the cream.
- 04Stop before they turn gluey. Lumps are not a failure.
- 05Taste. Add butter until you would eat this from the pot.
