Citrus chicken
Bright enough to cut a long day in half.
Too hot for a roast. The bright version of the same instinct.

About this much
Adjust until it feels right.
- Chicken pieces — thighs if you have them
- An orange or two, or a lemon and an orange
- Garlic, a few cloves, smashed
- Olive oil, enough to gloss
- A pinch of chili if the night wants it
Play it
A suggestion, not a command.
- 01Zest first, then juice. Keep both.
- 02Brown the chicken. Do not crowd it.
- 03Garlic in the fat for half a minute — just until you can smell it.
- 04Juice and zest back in. Let it reduce until it coats a spoon, not until a recipe says glaze.
- 05Taste. Add salt or more citrus until the air in the kitchen changes.

The orange was for breakfast. He used it anyway. The kitchen smelled like December without trying.
Riff: Breakfast orange, zest and juice.
