- Egg yolks — two or three
- Butter, melted, more than seems decent
- Lemon, a squeeze
- Eggs for the plate, however you like them
- Toast, the good bread
Play it
A suggestion, not a command.
- 01Yolks in a bowl over barely simmering water. Too hot and it will break. It might break anyway.
- 02Butter in a thin stream, whisking like you mean it.
- 03If it breaks: a fresh yolk in a clean bowl, then whisk the broken sauce into that. This is the whole lesson.
- 04Lemon at the end. Salt. It should taste like a good morning, not like a test.
- 05Spoon over eggs. Do not apologize for the first attempt.
