- Oil and salt on the skins
- Butter, sour cream, cheese — the usual suspects
- Chives or green onion if they are in the drawer
- Leftover chicken or bacon, only if it is already made

- 01Oil and salt the skins. Fork them. Hot oven, a long time.
- 02They are done when the skins feel like paper and the insides give.
- 03Split them open so the steam escapes. Butter while they can still take it.
- 04Each plate gets dressed by the person who will eat it.
- 05Eat the skin. That is half the point.
